Japanese Fried Chicken Karaage

What you’ll need for this recipe:(For 4 people)

  • Chicken thigh 600g cut into small pieces

  • Soy sauce 100mL

  • Sake 120mL

  • Grated garlic (2 cloves)

  • Grated ginger 20g

  • Sugar 2 tsp

  • Cornstarch for coating

  • GF Flour (optional, mix 1:1 with cornstarch for lighter coating

  • Fying oil

  • Our Lemon &Scallion Sauce

    In a bowl, combine soy sauce, sake, garlic, ginger and sugar

    Add the chicken, rub well, cover with plastic wrap and let it marinate in the refrigerator for 30mins to an hour. Remove the chicken from the marinade and gently pat dry with paper towels.

    Coat evenly with cornstarch, shaking off any excess.

    Heat oil to 170°C (340°F) and fry the chicken for 2-3 minutes, then remove and let rest for 2 minutes.

    Raise the oil temperature to 180°C (355°F) and fry again for about 1 minute to crisp the outside.
